Emerging studies suggest that resistant starch may contribute to eye health. Two animal studies have shown that rats consuming RS2 resistant starch from high amylose corn developed significantly fewer lesions, photoreceptor abnormalities and advanced glycation end-products that precede age-related macular degeneration when compared to rats fed high glycemic starch. The glycemic health and insulin sensitivity benefits of resistant starch may contribute to these effects.
