History
Oka cheese was heavily influenced by the work of the monks of the Cistercian Abbey of Notre-Dame du Lac (fr. Abbaye Cistercienne d'Oka). Within a few years, through an affiliation with the Université de Montréal, the monastery created an agricultural school. Frequently called the Abbaye Notre-Dame-du-Lac, the Trappist monastery became well known for its Port-Salut cheese, made from a Breton recipe brought with them from France.

“You that would judge me do not judge alone
This book or that, come to this hallowed place
Where my friends portraits hang and look thereon;

Think where mans glory most begins and ends
And say my glory was I had such friends.”
—William Butler Yeats (18651939)
“Only the history of free peoples is worth our attention; the history of men under a despotism is merely a collection of anecdotes.”
—Sébastien-Roch Nicolas De Chamfort (17411794)
“Its nice to be a part of history but people should get it right. I may not be perfect, but Im bloody close.”
—John Lydon (formerly Johnny Rotten)
