Green Sauce - French Sauce Verte

French Sauce Verte

The French sauce verte au pain was already known in the Renaissance, and was originally a bread sauce very similar to the Italian. Today, however, the term frequently refers to a kind of mayonnaise flavoured with tarragon, and sometimes parsley and sage. Lemon juice is often used instead of vinegar.

Famous quotes containing the words french and/or sauce:

The French manner of hunting is gentlemanlike; ours is only for bumpkins and bodies. The poor beasts here are pursued and run down by much greater beasts than themselves; and the true British fox-hunter is most undoubtedly a species appropriated and peculiar to this country, which no other part of the globe produces.
Philip Dormer Stanhope, 4th Earl Chesterfield (1694–1773)

... we shall never become an immense power in the world until we concentrate all our money and editorial forces upon one great national daily newspaper, so we can sauce back our opponents every day in the year; once a month or once a week is not enough.
    Susan B. Anthony (1820–1906)
